    Prepare the Marinade

    In a bowl, combine the olive oil, minced garlic cloves, oregano, lemon juice, salt, and black pepper to create a marinade.

    Marinate the Lamb

    Place the lamb shoulder in a large ziplock bag or a bowl, and pour the marinade over the lamb. Seal the bag or cover the bowl, and let it marinate in the refrigerator for at least 2 hours, preferably overnight.

    Preheat the Oven

    Preheat your oven to 180°C (350°F) while the lamb is marinating.

    Prepare the Potatoes

    Peel and cut the potatoes into wedges. Place them in a large roasting pan.

    Add the Lamb and Wine

    Remove the lamb from the marinade, allowing the excess to drip off. Place the lamb on top of the potato wedges in the roasting pan. Pour the red wine around the lamb and potatoes.

    Roast the Dish

    Cover the roasting pan with aluminum foil and roast in the preheated oven for 1.5 to 2 hours, or until the lamb is tender. Remove the foil for the last 30 minutes to allow the lamb to brown.

    Garnish and Serve

    Once cooked, remove the lamb from the oven and let it rest for 10 minutes. Garnish with freshly chopped parsley before serving.
