Oysters
Prepare the Oysters
Start by keeping the fresh oysters in the refrigerator until ready to serve. When you're ready, shuck the oysters carefully using an oyster knife, discarding the top shell and keeping the oyster and its liquor in the bottom shell.
Chill the Oysters
Place the shucked oysters on a bed of ice to keep them cold while you prepare the sauces. This also ensures a refreshing experience for the diners.

Mix the Cocktail Sauce
In a medium bowl, combine the ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce. Stir well until all ingredients are mixed thoroughly. Taste and adjust the hot sauce as needed.
Mignonette Sauce
Prepare the Mignonette Sauce
In a small bowl, combine the red wine vinegar, finely chopped shallots, and crushed black peppercorns. Mix well and let it sit for at least 10 minutes to allow the flavors to meld.
