Prepare the Chicken

Preheat your oven to 375°F (190°C). In a large bowl, combine the organic chicken leg quarters and breasts with olive oil, salt, black pepper, fresh thyme, and minced garlic. Rub the mixture all over the chicken to ensure even seasoning.

Roast the Chicken

Place the seasoned chicken in a roasting pan. Roast in the preheated oven for about 45-50 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy and golden brown.

Caramelize the Onions

While the chicken is roasting, heat a tablespoon of olive oil in a skillet over medium heat. Add the thinly sliced onions and a pinch of salt. Cook for about 20 minutes, stirring occasionally, until the onions are soft and caramelized. Remove from heat and set aside.

Cook the Orzo

In a medium saucepan, bring the chicken broth to a boil. Add the orzo pasta and cook according to package instructions, usually about 8-10 minutes, until al dente. Drain and return to the saucepan.

Combine Orzo and Yogurt

Stir in the Greek yogurt and caramelized onions into the cooked orzo. Add lemon juice and adjust seasoning with salt and pepper to taste. Mix well until combined and heated through.

Serve

Once the chicken is done roasting, let it rest for 5 minutes. Serve the chicken over the yogurt orzo mixture and drizzle with any juices from the roasting pan. Garnish with additional fresh thyme if desired.
