    Preparing the Octopus

    Start by cleaning the octopus under cold running water. Remove the beak and innards if not already done.

    Boiling the Octopus

    In a large pot, bring salted water to a boil. Add the octopus and boil for about 40-50 minutes until tender. Once done, remove from water and allow to cool.

    Preparing the Vegetables

    While the octopus is cooling, thinly slice the red and sweet onions. Chop the roasted red peppers and fresh parsley, and finely chop the dill.

    Making the Vinaigrette

    In a bowl, whisk together the red wine vinegar, olive oil, salt, and black pepper. Mix in the capers and chopped dill.

    Grilling the Octopus

    Preheat the grill to medium-high heat. Cut the octopus into tentacles and brush with olive oil. Grill for 3-4 minutes on each side until charred and crispy.

    On a serving plate, arrange the grilled octopus, topped with the sliced onions, roasted peppers, and parsley. Drizzle with the red wine vinaigrette before serving.
