Prepare the Pita Sticks
Start by preheating the oven to 180°C (350°F). Cut the pita bread into strips or wedges.
Brush the pita pieces with olive oil, sprinkle with salt and pepper, and place them on a baking sheet. Bake for about 10-12 minutes or until they are crispy and golden brown. Remove from the oven and set aside.
Clean the Mussels
While the pita is baking, rinse the PEI mussels under cold water. Scrub the shells with a brush to remove any dirt or debris, and remove the beards if they are still attached. Discard any mussels that are open and do not close when tapped.
Add Wine and Ouzo
Pour in the Ouzo and white wine, and bring to a simmer. Allow the mixture to reduce for about 2-3 minutes.
Cook the Mussels
Add the cleaned mussels to the pot along with the spicy tomato sauce. Stir to combine, then cover the pot and cook for about 5-7 minutes or until the mussels have opened. Discard any mussels that remain closed.
Finish and Serve
Once the mussels are cooked, sprinkle the grated feta cheese and chopped parsley over the top. Season with salt, black pepper, and red pepper flakes to taste. Serve immediately with crispy pita sticks on the side.
