Cooking the Lamb

Add the Broth and Herbs
Add the beef broth, bay leaves, thyme, salt, and black pepper to the pot. Stir to combine.

Cook the Lamb
Return the lamb shanks to the pot, cover, and reduce the heat to low. Let it simmer for about 2-2.5 hours, or until the lamb is tender and easily pulls away from the bone.

Boil Water for Pasta
In a separate pot, bring 4 cups of water to a boil.

Cook the Trahana
Once boiling, add the trahana pasta and cook according to package instructions, usually 10-12 minutes. Drain and set aside.
Plating the Dish

Prepare Ingredients
Once the lamb is cooked, remove the shanks from the pot and shred the meat off the bone. Discard the bones.

Assemble the Dish
On each plate, place a serving of the cooked trahana pasta. Top with the shredded lamb, diced tomato, and a generous sprinkle of grated feta cheese.

Finish with a sprinkle of chopped fresh parsley for garnish.
