Lamb Shank

Trahana Pasta

Method

Cooking the Lamb

  1. 1

    Sear the Lamb

In a large pot, heat the olive oil over medium-high heat. Sear the lamb shanks on all sides until browned, about 5-7 minutes. Remove the lamb shanks and set them aside.

  2. 2

    Sauté the Vegetables

In the same pot, add the minced garlic, chopped onion, carrot, and celery. Sauté for about 5 minutes, or until the vegetables are softened.

  3. 3

    Deglaze the Pot

Pour the red wine into the pot, scraping up any browned bits from the bottom. Let it simmer for 2-3 minutes.

  4. 4

    Add the Broth and Herbs

Add the beef broth, bay leaves, thyme, salt, and black pepper to the pot. Stir to combine.

  5. 5

    Cook the Lamb

Return the lamb shanks to the pot, cover, and reduce the heat to low. Let it simmer for about 2-2.5 hours, or until the lamb is tender and easily pulls away from the bone.

Cooking the Trahana Pasta

  1. 6

    Boil Water for Pasta

In a separate pot, bring 4 cups of water to a boil.

  2. 7

    Cook the Trahana

Once boiling, add the trahana pasta and cook according to package instructions, usually 10-12 minutes. Drain and set aside.

Plating the Dish

  1. 8

    Prepare Ingredients

Once the lamb is cooked, remove the shanks from the pot and shred the meat off the bone. Discard the bones.

  2. 9

    Assemble the Dish

On each plate, place a serving of the cooked trahana pasta. Top with the shredded lamb, diced tomato, and a generous sprinkle of grated feta cheese.

  3. 10

    Garnish

Finish with a sprinkle of chopped fresh parsley for garnish.
