    Preheat the Oven

    Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

    Mix Dry Ingredients

    In a large bowl, combine the chopped walnuts, flour, sugar, baking powder, cinnamon, and salt. Set aside.

    Mix Wet Ingredients

    In another bowl, whisk together the eggs, vegetable oil, and vanilla extract until well blended.

    Combine Mixtures

    Gradually add the wet mixture to the dry ingredients, mixing until just combined. Do not overmix.

    Bake the Cake

    Pour the batter into the prepared baking pan and smooth the top. Bake for 30-35 minutes or until a toothpick comes out clean.

    Cool the Cake

    Remove the cake from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Syrup

    Make the Syrup

    In a saucepan, combine water, sugar, honey, and the cinnamon stick. Bring to a boil over medium heat, stirring until the sugar dissolves.

    Simmer the Syrup

    Reduce heat and let the syrup simmer for about 10 minutes. Remove from heat and stir in the orange zest.

    Cool the Syrup

    Allow the syrup to cool to room temperature.

Candied Orange Zest

    Prepare the Orange Peel

    Carefully peel the oranges, making sure to avoid the white pith. Cut the peel into thin strips.

    Cook the Peels

    In a saucepan, combine the orange peel, sugar, and water. Bring to a boil, then reduce the heat and simmer for about 20 minutes until the peels are tender.

    Dry the Peels

    Remove the peels from the syrup and let them cool on a wire rack until they are no longer sticky.

To Serve

    Serve the Cake

    Cut the cooled cake into squares and place on serving plates. Drizzle generously with the cinnamon syrup.

    Add Gelato

    Top each slice of cake with a scoop of vanilla gelato and garnish with candied orange zest.
