Form the crust
Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake in the preheated oven for 10 minutes, then let it cool.
Cheese Filling Preparation

Mix the cheese filling
In a large mixing bowl, beat the softened cream cheese until smooth. Add the Greek yogurt, honey, eggs, and vanilla extract. Mix until everything is well combined and creamy.

Pour the filling
Pour the cheese filling over the cooled crust, spreading it evenly. Tap the pan gently on the counter to remove any air bubbles.

Bake the cheesecake
Bake in the oven at 325°F (160°C) for about 50-60 minutes, or until the filling is set but still slightly jiggly in the center. Turn off the oven and let the cheesecake cool inside for an hour.

Bake the topping
Spread the mixture out on a baking sheet and bake at 350°F (175°C) for 15-20 minutes or until golden brown, stirring halfway through to ensure even baking.

Assemble the cheesecake
Once the cheesecake is completely cooled, remove it from the springform pan. Top with the spiced kadaifi and sprinkle with chopped pistachios before serving.
