Reduce the heat to low and continue to cook for about 10-15 minutes until the mixture thickens. Stir in the vanilla extract and remove from heat. Allow to cool slightly.

Prepare the Phyllo Dough
Preheat your oven to 350°F (175°C). Melt the butter in a small saucepan. Lay out the phyllo dough on a clean surface and cover with a damp cloth to prevent it from drying out.

Assemble the Galaktoboureko
Spoon the semolina custard onto the phyllo dough, spreading it evenly. Fold the sides of the phyllo over the custard and then roll it tightly to form a log.

Bake the Galaktoboureko
Bake in the preheated oven for 30-40 minutes or until golden brown and crisp.

Remove from heat and add the cinnamon stick. Allow the syrup to cool.

Finish and Serve
Once the Galaktoboureko is done baking, remove it from the oven and immediately pour the cooled syrup over the hot pastry.
