Filet Mignon Skewers

Method

Preparation

  1. 1

    Prepare the Filet Mignon

Cut the filet mignon into 1-inch cubes. In a bowl, mix the harissa paste, olive oil, salt, and black pepper. Add the filet pieces to the bowl and toss until well-coated. Let marinate for at least 30 minutes.

  2. 2

    Skewer the Filet Mignon

Preheat the grill or grill pan over medium-high heat. Thread the marinated filet mignon cubes onto skewers, leaving a little space between each piece.

  3. 3

    Grill the Skewers

Place the skewers on the grill and cook for about 3-4 minutes on each side for medium-rare, or until your desired level of doneness is reached. Remove from the grill and let rest.

  4. 4

    Cook the Eggs

In a non-stick skillet, heat a little olive oil over medium heat. Crack the eggs into the skillet, cooking them sunny side up until the whites are set but the yolks are still runny, about 3-4 minutes.

  5. 5

    Warm the Pita Bread

Warm the pita bread on the grill for about 30 seconds on each side until soft and slightly charred.

  6. 6

    Serve

To serve, place the filet mignon skewers on a plate alongside the sunny side eggs. Drizzle chimichurri sauce over the skewers, sprinkle with capers, and serve with warm pita bread.
