Brining the Chicken

Prepare the Brine
In a large bowl, combine water, crumbled feta cheese, salt, black peppercorns, fresh thyme, and crushed garlic. Stir until the salt is dissolved.

Brine the Chicken
Add the chicken halves to the brining solution, making sure they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.

Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Chicken
Remove the chicken from the brine and pat dry with paper towels. In a small bowl, mix olive oil, honey, lemon juice, paprika, salt, and pepper to create a marinade.

Marinate the Chicken
Rub the marinade all over the chicken halves, ensuring they are well-coated.

Caramelize the Chicken
Place the chicken halves skin-side up on a baking sheet. Roast in the preheated oven for about 45-55 minutes, basting with the pan juices halfway through, until the skin is golden brown and the internal temperature reaches 165°F (75°C).

Remove the chicken from the oven and let it rest for 10 minutes before carving and serving.
