Preparation

    Make the Salted Caramel

    In a medium saucepan over medium heat, add the granulated sugar. Stir continuously until the sugar melts and turns a deep amber color. Be careful not to burn it.

    Add Cream and Salt

    Once the sugar is melted, slowly pour in the heavy cream while stirring. The mixture will bubble up, so be cautious. Stir in the salt and remove from heat. Let it cool slightly.

    Prepare the Custard Base

    In a separate bowl, whisk together the egg yolks and vanilla extract until combined. Gradually add the milk and cooled caramel mixture to the egg yolks, whisking constantly to prevent the eggs from cooking.

    Cook the Custard

    Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 10-12 minutes).

    Prepare the Crumble

    In a mixing bowl, combine the flour, cocoa powder, and chopped dark chocolate. Cut in the butter until the mixture resembles coarse crumbs.

    Bake the Crumble

    Spread the crumble mixture onto a baking sheet and bake at 350°F (175°C) for 15-20 minutes until crispy. Let cool.

    Assemble the Budino

    Pour the custard into serving cups and let it chill in the refrigerator for at least 4 hours to set.

    Serve

    Top each budino with the dark chocolate crumble and a sprinkle of sea salt before serving.
