Grilled Pita Bread

Tzatziki Preparation

Prepare the Cucumber
Grate the cucumber using a box grater. Place it in a clean kitchen towel and squeeze out excess moisture.

Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
Htipiti Preparation

Blend Ingredients
In a food processor, combine feta cheese, roasted red bell pepper, olive oil, minced garlic, lemon juice, salt, and black pepper.

Process
Blend until smooth and creamy. Adjust seasoning if necessary.

Chill
Transfer to a bowl, cover, and refrigerate for at least 30 minutes before serving.
Melitzanosalata Preparation

Roast the Eggplant
Preheat the oven to 400°F (200°C). Prick the eggplant with a fork and place it on a baking sheet. Roast for about 30-40 minutes until the skin is charred and the flesh is soft. Let it cool.

Cover and refrigerate for at least 30 minutes to enhance the flavors.
Grilled Pita Bread Preparation

Prepare the Pita
Brush both sides of pita bread with olive oil and sprinkle with salt.

Preheat a grill or grill pan over medium heat. Grill the pita bread for about 2-3 minutes on each side until warm and slightly charred.

Cut the grilled pita into wedges and serve with the spreads.
