Method
Egg base
Crack 3 large eggs into a medium bowl. Add 1 tablespoon whole milk, a pinch of salt and a pinch of black pepper. Whisk vigorously until mixture is uniformly pale and slightly frothy, about 20–30 seconds. This incorporates air for a tender texture.
Prepare fillings
If using vegetables or meats
If you plan to include mushrooms, ham, bacon, or spinach, pre-cook them first. Sauté sliced mushrooms (about 1/4 cup) in 1 teaspoon oil over medium-high heat until browned and any liquid has evaporated, 4–5 minutes; remove and set aside. If using bacon, cook until crisp, drain and chop. Wilt spinach in the hot pan 30–60 seconds and drain excess moisture. Dice tomato and shred cheese; keep fillings measured and within easy reach.
Cook omelet
Heat a nonstick or well-seasoned 8–10 inch skillet over medium-low to medium heat. Add 1 tablespoon unsalted butter and (optional) 1 teaspoon neutral oil; swirl to coat the pan and melt the butter until foaming but not browned.
Add fillings
Evenly distribute your chosen fillings (about 1/4 cup total shredded cheese, 1/4 cup cooked mushrooms or 1/4 cup diced ham/bacon, 2 tablespoons diced tomato, 1 tablespoon chopped herbs, or 1/4 cup spinach) over one half of the omelet, leaving a small border.
Fold and finish
Using the spatula, gently lift the other half of the omelet and fold it over the filled half. Let the folded omelet cook for another 20–30 seconds to melt the cheese and finish setting. For a slightly creamier interior, remove from heat when a thin film of uncooked egg remains on top; residual heat will finish it.
Serve
Slide the omelet onto a warmed plate. Garnish with extra herbs and a dash of hot sauce or salsa if desired. Serve immediately.
