Method

Fish Preparation

1

Prepare the Fish

In a mixing bowl, combine flour, cornstarch, salt, black pepper, and cayenne pepper. In another bowl, beat the egg. Dip each fish fillet into the egg, then coat in the flour mixture.

2

Fry the Fish

Heat the oil in a deep skillet over medium-high heat. Once the oil is hot, carefully add the coated fish fillets and fry for about 4-5 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.

Fruit Salsa

3

Make the Fruit Salsa

In a bowl, combine diced pineapple, diced mango, chopped red onion, chopped cilantro, lime juice, and salt. Mix well and set aside to let the flavors meld.

Spicy Mango Sauce

4

Prepare the Sauce

In a small bowl, mix together the mango puree, Sriracha sauce, lime juice, and honey until well combined. Adjust the spice level by adding more Sriracha if desired.

Taco Assembly

5

Assemble the Tacos

Warm the corn tortillas in a skillet or microwave. Place a few leaves of Bibb lettuce on each tortilla, followed by a few pieces of fried fish. Top with fruit salsa and drizzle with spicy mango sauce. Serve immediately.
