Method
Duck Meatballs
Prepare the Meatballs
In a large bowl, combine ground duck, garlic, ginger, green onions, soy sauce, sesame oil, egg, bread crumbs, salt, and black pepper. Mix well until combined.
Form and Cook Meatballs
Form the mixture into small meatballs, about 1 inch in diameter. In a skillet, heat oil over medium heat and cook the meatballs until browned and cooked through, about 8-10 minutes. Remove and set aside.
Five-Spice Rice Crisps
Prepare the Rice Crisps
In a bowl, mix the cooked rice with five-spice powder until evenly coated.
Fry the Rice Crisps
In a frying pan, heat oil. Once hot, drop spoonfuls of the rice mixture into the oil and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
Pineapple-Hoisin Glaze
Make the Glaze
In a saucepan, combine pineapple juice and hoisin sauce. In a small bowl, mix cornstarch with water to create a slurry, then add to the saucepan. Bring to a simmer and stir until thickened, about 5 minutes.
Assembly and Serving
Serve the Dish
On a plate, place a few rice crisps, top with duck meatballs, drizzle with pineapple-hoisin glaze, and garnish with fresh cilantro and sliced chilis.
