Prepare the Filling

Mix the Filling

In a bowl, combine the shrimp, scallions, lardo, garlic, ginger, soy sauce, salt, and pepper. Mix well and set aside.

Assemble the Wontons

Fill the Wontons

Place a wonton wrapper on a clean surface. Spoon about 1 tablespoon of the filling into the center. Moisten the edges with water and fold the wrapper over to form a triangle. Press the edges to seal. Repeat with remaining wrappers and filling.

Fry the Wontons

Heat the Oil

In a large skillet or deep pan, heat the vegetable oil over medium-high heat until hot.

Fry the Wontons

Carefully add a few wontons at a time to the hot oil. Fry until they are golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

Prepare the Sauce

Make the Chili-Mango Sauce

In a blender, combine the diced mango, chili sauce, lime juice, honey, and salt. Blend until smooth. Adjust seasoning to taste.

Serve the crispy shrimp wontons hot with the chili-mango sauce on the side for dipping.
