Preparation
Prepare the Beans
Rinse and drain the black beans. In a small saucepan, heat the beans over medium heat until warmed through. Set aside.
Fry the Eggs
In a non-stick skillet, heat a little oil over medium heat. Crack the pasture-raised eggs one by one into the skillet and cook to your preferred doneness (sunny-side up, over-easy, etc.). Season with salt and pepper to taste.
Assembly
Layer the Dish
In a large serving dish, create a base layer with tortilla chips. Top with warmed black beans, tomatillo salsa, and queso fresco.
Add the Eggs
Carefully place the fried eggs on top of the layered tortilla chips and toppings.
Garnish
Finish with a generous serving of pico de gallo on top. Serve immediately.
