Prepare the Fish
Clean and gut the red snapper. Rinse under cold water and pat dry with paper towels. Make a few diagonal cuts on each side of the fish to help it cook evenly.
Season the Fish
In a bowl, mix flour, cornstarch, salt, black pepper, garlic powder, and paprika. Coat the red snapper thoroughly with the mixture, ensuring it gets into the cuts on the sides.
Heat the Oil
In a large frying pan or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Fish
Carefully place the coated snapper in the hot oil. Fry for about 5-7 minutes on each side until golden brown and crispy. Use a slotted spoon to remove the fish and drain on paper towels.
Cook the French Fries
In the same oil, add the French fries and cook according to package instructions or until golden brown. Drain on paper towels.
Serve
Plate the fried red snapper with a side of French fries. Garnish with lemon wedges and serve immediately.
