Clean the Oysters
Rinse the Blue Point oysters under cold running water to remove any sand or debris. Scrub the shells with a brush to ensure they are clean.
Shuck the Oysters
Using an oyster knife, carefully insert the knife into the hinge of the oyster and twist to open. Slide the knife along the top shell to sever the muscle, then remove the top shell completely. Be careful not to spill the juices.
Prepare the Garnish
Squeeze the lemon juice into a small bowl, and mix in the hot sauce and freshly grated horseradish. Set aside.
Serve
Arrange the shucked oysters on a platter filled with crushed ice. Sprinkle with sea salt and garnish with chopped fresh parsley. Serve alongside the lemon sauce mixture for dipping.
