Seasoned beef cooked with collard greens, onions, and garlic
Chop the beef into bite-sized pieces, finely chop the onion, mince the garlic, and wash and chop the collard greens.
In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Then add the minced garlic and sauté for an additional minute until fragrant.
Add the beef pieces to the pot, season with salt, black pepper, paprika, and cumin. Cook until the beef is browned on all sides, about 5-7 minutes.
Pour in the water or broth, bringing it to a simmer. Add the collard greens and stir well to combine. Bring the mixture to a boil, then reduce the heat to low.
Cover the pot and let it simmer for about 45 minutes to 1 hour, or until the beef is tender and the collard greens are cooked through. Check occasionally and add more liquid if necessary.
Once done, taste and adjust seasoning if needed. Serve hot with rice or injera.
