In a large mash tun, combine the Pale Malt, Roasted Barley, and Crystal Malt. Add 5 gallons of water heated to 165°F (74°C). Stir well and maintain the temperature at 152°F (67°C) for 60 minutes.

After mashing, sparge the grains with hot water (170°F/77°C) to collect around 6 gallons of wort.

Sparging

Bring the collected wort to a boil. Once boiling, add the Centennial Hops and boil for 60 minutes.

5 minutes before the end of the boil, add the Citra Hops to the wort.

After the boil, cool the wort quickly using a wort chiller until it reaches 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Add the American Ale Yeast and seal with an airlock. Allow to ferment at room temperature (around 68°F to 72°F) for 1-2 weeks.

Fermentation

Once fermentation is complete, add 1 cup of Lactose and 2 cups of Pineapple Puree to the fermentation vessel. Stir gently to combine.

Transfer the beer into sanitized bottles, leaving about an inch of headspace. Cap the bottles and allow them to carbonate at room temperature for another 1-2 weeks.
