Preparation
1. Mashing
In a large brew kettle, heat 5 gallons of water to 165°F (74°C). Add the Pale Malt and Caramel Malt, stirring to combine. Maintain the temperature at 150°F (65°C) for 60 minutes.
2. Lautering
After mashing, drain the liquid (wort) from the grains into a separate kettle, rinsing the grains with hot water to extract more sugars. Collect a total of 6 gallons of wort.
3. Boiling
Bring the wort to a boil, then add the Citra Hops, Simcoe Hops, and Amarillo Hops. Boil for 60 minutes, adding hops at intervals as desired for flavor and aroma.
Fermentation
4. Cooling
Once the 60-minute boil is complete, cool the wort to 70°F (21°C) as quickly as possible using a wort chiller or an ice bath.
5. Pitching Yeast
Transfer the cooled wort to a sanitized fermentation vessel. Sprinkle the American Ale Yeast on top and seal with an airlock.
6. Fermenting
Allow the beer to ferment at a consistent temperature of 68-72°F (20-22°C) for 1-2 weeks.
Bottling
7. Adding Mango Puree
After fermentation is complete, gently stir in the Mango Puree into the beer to incorporate the flavor without oxidizing it.
8. Priming and Bottling
Dissolve the Priming Sugar in 2 cups of boiling water and add to the beer. Bottle the beer in sanitized bottles and cap them.
9. Carbonation
Allow the bottles to carbonate at room temperature for 1-2 weeks before refrigerating and enjoying.
