In a large pot, heat 5 gallons of filtered water to approximately 165°F (74°C).

Heat Water

Once the water reaches the desired temperature, add the pale malt, crystal malt, and chocolate malt. Stir well to ensure all grains are saturated.

Add Grains

Maintain the temperature between 150°F (65°C) and 155°F (68°C) for 60 minutes, stirring occasionally.

Mash

After mashing, sparge the grains with hot water to collect the wort.

Boil Wort

Once boiling, add 1 oz of Fuggle hops and boil for 60 minutes.

5 minutes before the end of the boil, add 0.5 oz of East Kent Goldings hops for aroma.

Finish Hops

After the boil, cool the wort quickly to around 70°F (21°C) using a wort chiller or ice bath.

Cool Wort

Once cooled, transfer the wort to a sanitized fermenter and pitch the English ale yeast.

Pitch Yeast

Seal the fermenter and allow fermentation to take place for 1-2 weeks at around 68°F (20°C).

Ferment

Dissolve 3 oz of corn sugar in 2 cups of boiling water and let it cool.

Prepare Priming Sugar

Once fermentation is complete, mix the priming sugar solution with the beer and bottle into sanitized bottles.

Bottle Beer

Cap the bottles and condition at room temperature for 2 weeks before refrigerating.
