IPA 6% Milton, Delaware. Brewed with a slew of great Northwest hops. A powerful but balanced East Coast IPA with a lot of citrusy hop character.

In a large mash tun, heat 6 gallons of water to 165°F (74°C). Add the pale malt and crystal malt, stirring to ensure all grains are saturated. Maintain the temperature at 150°F (65°C) for 60 minutes.

Mashing

After the mash, sparge the grains with hot water (170°F / 77°C) until you collect about 6 gallons of wort.

Sparging

Bring the wort to a rolling boil. Once boiling, add the Cascade hops and boil for 60 minutes, adding the Centennial, Simcoe, and Amarillo hops at intervals (e.g., 15 minutes, 5 minutes, and at flameout respectively).

Boil

After the boil, cool the wort quickly using a wort chiller or an ice bath to around 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermenter and pitch the American Ale yeast. Seal the fermenter and let it ferment at 68°F (20°C) for about 1-2 weeks.

Fermentation

Once fermentation is complete, prepare a sugar solution for carbonation. Add the solution to the bottling bucket, then siphon the beer from the fermenter into the bottling bucket. Bottle and cap the beer, allowing it to carbonate for 1-2 weeks.
