Hummus Base
Prepare chickpeas (optional: softer texture)
If you prefer extra-smooth hummus, transfer the drained chickpeas to a small pot, cover with water, bring to a gentle simmer and cook 10 minutes. Drain, reserving a few tablespoons of the cooking liquid. If using canned chickpeas as-is, skip this step.
Add garlic, cumin, and salt
Add peeled garlic cloves, ground cumin, and salt to the whipped tahini-lemon mixture. Pulse briefly to incorporate and soften the garlic (about 10–15 seconds).
Add chickpeas and initial liquid
Add the drained chickpeas to the processor. With the motor running, drizzle in 2 tablespoons of olive oil and 2 tablespoons of cold water or reserved chickpea liquid. Process until the mixture is thick and smooth, 1–2 minutes, scraping down the sides as needed.
Adjust texture and seasoning
If the hummus is too thick or grainy, add additional cold water or reserved chickpea liquid 1 tablespoon at a time while processing until you reach a creamy, silky consistency (about 1–3 more tablespoons). Taste and adjust salt, lemon, or cumin as desired. For extra richness, add up to 1 additional tablespoon olive oil and pulse to combine.
Final purée
Process the hummus on high for another 30–60 seconds to achieve a very smooth texture. Transfer to a serving bowl and use the back of a spoon to create a shallow well in the center for garnish.
Garnish & Serving
Drizzle 1 tablespoon extra-virgin olive oil into the well. Sprinkle the surface with 1/2 teaspoon paprika and scattered chopped parsley. If using, sprinkle toasted pine nuts on top.
Serve immediately with warm pita, fresh vegetables, or store in an airtight container in the refrigerator for up to 4–5 days. Bring to room temperature and stir before serving if chilled.
