Beef & Seasoning

    Trim and season

    Pat the beef filets very dry with paper towel. Trim any excess fat/silver skin. Season all over with kosher salt and freshly ground black pepper, pressing the seasoning into the meat.

    Sear

    Heat a large heavy skillet (preferably cast iron) over high heat until smoking. Add olive oil and 1 tablespoon unsalted butter. Sear the filets 1.5–2 minutes per side, including the ends, until well browned but still rare inside. Use tongs to hold and sear edges briefly. Remove to a wire rack to cool for 10–15 minutes. Reserve pan juices for sauce if desired.

Duxelles (Mushroom Mixture)

    Prepare mushrooms

    Finely chop mushrooms (food processor pulses work well) until they resemble a coarse mince. Do not puree.

    Cook down

    In a wide sauté pan over medium heat, melt 2 tablespoons butter with 1 tablespoon olive oil. Add minced shallots and sauté 1–2 minutes until translucent. Add garlic and cook 30 seconds until fragrant. Add chopped mushrooms and increase heat to medium-high. Cook, stirring frequently, until the mushrooms release moisture and it evaporates and mixture becomes paste-like, about 8–12 minutes.

    Deglaze & finish

    Deglaze the pan with 3 tablespoons dry white wine or sherry, scraping up browned bits. Continue cooking until mostly dry. Stir in chopped thyme, parsley, 1 teaspoon salt and 1 teaspoon pepper. Taste and adjust seasoning. Cool the duxelles to room temperature (spread on a plate to speed cooling).

Prosciutto & Assembly

    Wrap with prosciutto

    On a sheet of plastic wrap, arrange 4 slices of prosciutto slightly overlapping into a rectangle roughly the length of a filet. Spread half of the cooled duxelles evenly over the prosciutto, leaving a 1/2" border. Place one seared filet in the center and use the plastic wrap to roll the prosciutto tightly around the filet, creating a compact log. Twist ends of plastic wrap to tighten. Repeat for the second filet. Chill wrapped filets in the refrigerator for 15–20 minutes to firm.

    Prepare puff pastry

    On a lightly floured surface, roll out one puff pastry sheet to about 1/8" thickness and to a rectangle large enough to fully encase a filet (repeat for second sheet). Brush a light layer of beaten egg wash around the edges of the pastry to help seal.

    Assemble Wellington

    Unwrap the chilled prosciutto-covered filets. Place a filet near one edge of the pastry, brush the opposite edge with egg wash, then fold pastry over the filet and seal edges tightly, trimming any excess. Tuck ends under to create a neat package. Place seam-side down on a parchment-lined baking sheet. Repeat with second filet. Use pastry scraps to decorate if desired; attach with egg wash.

    Egg wash & chill

    Whisk 1 egg yolk with 1 whole egg and 1 teaspoon cold water. Brush the entire pastry lightly with egg wash. Chill the assembled Wellingtons in the refrigerator for 15 minutes to firm pastry and prevent shrinkage.

    Bake

    Preheat oven to 425°F (220°C). Brush any exposed areas again with egg wash. Score the top lightly with a sharp knife for steam release. Bake on the center rack for 20–25 minutes for medium-rare (internal temp around 120–125°F / 49–52°C). For medium, bake 25–30 minutes (internal 130–135°F / 54–57°C). Remove from oven and transfer to cutting board. Let rest 8–10 minutes before slicing to allow carryover cooking and juices to redistribute.

Madeira Demi-Glace

    Reduce and flavor

    While the Wellington bakes or rests, melt 1 tablespoon unsalted butter in a small saucepan over medium heat. Add 1 teaspoon minced shallot and sauté 1 minute until fragrant but not browned. Add 1 cup Madeira wine and bring to a brisk simmer. Reduce the Madeira by about half (6–8 minutes).

    Finish sauce

    Add 1 cup beef demi-glace and a sprig of thyme. Simmer gently until sauce is slightly thickened and coats the back of a spoon, about 5–7 minutes. Remove thyme. Reduce heat to low and whisk in cold cubed butter, one cube at a time, to emulsify and gloss the sauce. Season to taste with 1 teaspoon salt and 1/2 teaspoon black pepper. Keep warm until serving.

To Serve

    Slice each Wellington into 1"–1 1/2" thick medallions. Arrange two slices per plate (or one whole Wellington for large portions). Spoon warm Madeira demi-glace alongside or lightly over the slices. Garnish with a sprinkle of chopped parsley or a small thyme sprig if desired. Serve immediately.
