    Muddle sage

    Place 3 of the fresh sage leaves in the base of a cocktail shaker. Add the simple syrup and gently muddle 6–8 times — press to release the oils but avoid shredding the leaves into tiny pieces.

    Add liquids

    Add the Sulter's Gin (2 oz), Alizé Gold Passion liqueur (1 oz), and fresh lime juice (0.75 oz) to the shaker.

    Add ice and bitters

    Fill the shaker with ice (about 1 cup). If using, add 2 dashes of aromatic bitters to deepen the aromatics.

    Shake

    Shake vigorously for 12–15 seconds until the outside of the shaker is well chilled and slightly frosted.

    Double-strain

    Double-strain the cocktail into a chilled coupe or Nick & Nora glass using both the shaker strainer and a fine mesh strainer to catch tiny sage bits and ice shards.

    Garnish and serve

    Garnish with the remaining sage leaf or a small sage sprig and a lime wheel or twist. Optionally slap the sage between your palms first to release aromatics before placing it on the drink. Serve immediately.
