Creamed Rosemary Dijon Demi‑glace

    Bring to temperature & season

    Remove the lamb chops from the refrigerator 30–45 minutes before cooking so they come closer to room temperature. Pat dry with paper towels. Rub both sides lightly with olive oil and season evenly with kosher salt and freshly ground black pepper.

    Preheat grill or skillet

    Preheat a charbroiler, grill pan, or heavy cast-iron skillet over high heat until very hot (surface temperature about 450–500°F / 230–260°C). If using a skillet, add the neutral oil and let it shimmer but not smoke.

    Sear and char

    Place the lamb chops on the hot surface. Sear for 3–4 minutes without moving to develop a deep brown crust. Turn and sear the second side 3–4 minutes. If chops are thicker (2 in), sear edges briefly (30–45 seconds) to render fat and color the bones.

    Finish to temperature

    If using a grill, move chops to a cooler zone to finish, or transfer skillet to a 375°F (190°C) oven. Continue cooking until internal temperature reaches 125–130°F (52–54°C) for medium-rare or 135°F (57°C) for medium. This typically takes 4–8 additional minutes depending on thickness. Remove chops when 5°F below target as they will carryover cook.

    Rest

    Transfer chops to a cutting board, tent loosely with foil, and rest for 6–8 minutes. While resting, finish the sauce (below).

    Finish with butter

    After sauce is ready and chops have rested, place the chops back in the hot pan for 20–30 seconds per side with 1 tbs unsalted butter to glaze (optional). Spoon any butter and pan juices over chops before plating.

Creamed Rosemary Dijon Demi‑glace

    Sweat shallot

    In a medium saucepan over medium heat, melt 2 tbs unsalted butter. Add the finely minced shallot and a pinch of salt; sweat gently until translucent and soft, about 2–3 minutes. Do not brown.

    Add rosemary and Dijon

    Add the chopped rosemary and 1 tbs Dijon mustard to the shallots and stir for 30 seconds to bloom the aromatics and mustard flavor.

    Deglaze with wine

    Pour in 60 ml red wine and increase heat to medium-high. Scrape the bottom of the pan to release any fond. Reduce the wine by about half, approximately 2–3 minutes.

    Add demi‑glace and reduce

    Stir in 120 ml demi‑glace and 0.5 tsp Worcestershire sauce. Bring to a gentle simmer and reduce until slightly thickened and syrupy, about 3–5 minutes. The mixture should coat the back of a spoon.

    Finish with cream

    Lower heat to low and whisk in 60 ml heavy cream. Simmer gently 1–2 minutes to integrate and slightly thicken. Taste and adjust seasoning with salt and 1/4 tsp freshly ground black pepper (or to taste). If sauce becomes too thick, thin with up to 1–2 tbs warm stock or water.

    Keep warm

    Keep the sauce warm on the lowest heat while the lamb rests so it’s ready to spoon over the chops at service.

Plating & Garnish

    Slice each double-cut chop in half at the bone if desired, or leave whole. Spoon 1–2 tbs of the creamed rosemary Dijon demi‑glace on the plate and set the lamb on top or to the side. Drizzle additional sauce over the meat.

  2. 14

    Garnish with a small sprig of rosemary and a scattering of microgreens or chopped parsley. Serve immediately.
