Prepare poaching liquid

In a large saucepan or shallow pot, add 2 liters of water, kosher salt, whole black pepper, and bay leaf. Cut the halved lemon and squeeze both halves into the pot, then drop the rinds in as well. Bring the liquid to a gentle simmer over medium heat (do not boil aggressively).

Poach shrimp

Once the liquid is simmering (small bubbles, steam rising), add the colossal shrimp in a single layer. Cook until the shrimp turn pink and opaque and curl into a loose 'C' — about 2 to 3 minutes depending on size. Do not overcook; shrimp will finish cooking if slightly underdone in the hot liquid.

Shock shrimp

While the shrimp cook, fill a large bowl with 4 cups of ice and enough cold water to create an ice bath. As soon as shrimp are done, use a slotted spoon to transfer them immediately to the ice bath to stop cooking. Chill for 3 minutes until completely cool.

Dry and chill

Remove shrimp from the ice bath and place them on paper towels to dry. Refrigerate briefly (5–10 minutes) if serving extra cold. Keep tails on for presentation and easy handling.

Spicy Epic Cocktail Sauce

Combine the ketchup, prepared horseradish, Worcestershire sauce, fresh lemon juice, 4 drops of hot sauce, smoked paprika, ground black pepper, granulated sugar, and sea salt in a medium bowl.

Taste and adjust heat and acidity: add additional hot sauce, horseradish, or lemon juice in ½ teaspoon increments until the sauce is bright, spicy, and balanced. Chill the sauce in the refrigerator for at least 15 minutes to let flavors meld. Stir before serving.

Garnish & Serve

Arrange 5 chilled colossal shrimp on a small chilled plate or cocktail glass rim with a small ramekin of the spicy epic cocktail sauce in the center or on the side.

Garnish with a lemon wedge and a sprinkle of chopped parsley. Serve immediately so shrimp stay cold and the sauce is fresh.
