Prepare shaker
If using egg white, separate the egg and reserve 1/2 egg white. Chill a coupe or rocks glass by filling with ice and cold water; set aside.

Dry shake
Add white rum, coconut rum, fresh lemon juice, simple syrup, coconut water, and egg white (if using) to a cocktail shaker without ice. Seal and shake vigorously for 15–20 seconds until a frothy emulsion forms.

Wet shake
Open the shaker, add ice (about 1 cup) and the dashes of Angostura bitters, reseal and shake hard for another 12–15 seconds until well chilled (exterior of shaker becomes very cold).

Strain and serve
Discard the ice/water from the chilled glass. Double-strain the cocktail through a Hawthorne strainer and a fine mesh strainer (or a fine sieve) into the chilled coupe or a rocks glass filled with fresh ice, depending on preference.

Sprinkle toasted coconut flakes across the top of the foam or over the ice. Float the lemon wheel on the surface or mount on the rim, and tuck the mint sprig alongside or slap the mint lightly to release aroma and place on top.

Serve immediately with a short straw. Advise guests to stir gently before sipping to incorporate the bitters if they have settled.
