Chocolate Pâte

    Prepare ingredients

    Measure and chop the chocolate into small even pieces. Cube the butter. Separate the eggs, placing yolks in a medium heatproof bowl and whites in a clean mixing bowl. Let everything come to room temperature for about 15–20 minutes.

    Melt chocolate and butter (double boiler)

    Set a heatproof bowl over a saucepan of simmering (not boiling) water, ensuring the bowl does not touch the water. Add the chopped chocolate and cubed butter to the bowl. Stir frequently until fully melted and smooth, about 4–6 minutes. Remove from heat and stir in the vanilla and a pinch of salt. Let cool slightly (3–5 minutes).

    Whisk yolks with sugar

    Whisk the egg yolks and 40 g granulated sugar in the medium bowl until the mixture is pale, slightly thickened and ribbon-like when the whisk is lifted, about 2–3 minutes by hand or 1–2 minutes with a hand mixer on medium.

    Incorporate chocolate into yolks

    Temper the yolks by adding a tablespoon of the warm melted chocolate to the yolk mixture and whisking quickly. Repeat with one more tablespoon. Then pour the remaining chocolate into the yolks, whisking until smooth and uniform.

    Beat egg whites

    Using a clean bowl and whisk or electric mixer, beat the egg whites with a pinch of salt to soft peaks. This should take about 2–4 minutes on medium speed. Be careful not to overbeat; they should be glossy and hold a soft peak.

    Fold whites into chocolate

    Fold one third of the beaten egg whites into the chocolate mixture with a flexible spatula to lighten it (use large gentle strokes). Then fold in the remaining egg whites in two additions until no white streaks remain, keeping as much air as possible. Work gently to retain volume.

    Chill to set

    Divide the chocolate pâte among 4 serving dishes (ramekins or small bowls) or into one larger serving dish. Smooth the tops. Cover with plastic wrap and refrigerate for at least 2 hours, ideally 3–4 hours, until set but still creamy.

Berries & Garnish

    While the pâte chills, rinse the berries under cold water and gently pat dry with paper towels. Hull and quarter strawberries if large. Taste a few berries and remove any stems or blemished fruit. Keep refrigerated until ready to serve.

    Just before serving, arrange the raspberries, strawberries and blueberries on top of or alongside each portion of chilled chocolate pâte. Add 1–2 fresh mint leaves per portion as a garnish. Lightly dust with confectioners' sugar if desired.

Optional Serving Sauce

    For a quick chocolate cream sauce, warm the heavy cream in a small saucepan over low heat until hot but not boiling. Whisk in the cocoa powder and 5 g sugar until fully combined and smooth. Remove from heat and let cool slightly. Spoon a small pool of sauce beside each portion or drizzle lightly over the berries.

Serving

    Serve the chilled chocolate pâte topped or accompanied by fresh berries and a mint leaf. If using, drizzle the warm chocolate cream sauce at the table. Leftovers can be covered and refrigerated for up to 2 days.
