Mix sauce
In a medium bowl, combine mayonnaise, ketchup, yellow mustard, dill pickle relish, apple cider vinegar, paprika, salt, and black pepper. Whisk until smooth. Taste and adjust seasoning. Cover and refrigerate while you prepare the sliders (can be made up to 2 days ahead).

Form patties
Place the ground beef in a large bowl. Sprinkle kosher salt, black pepper, garlic powder, and Worcestershire sauce over the meat. Using your fingertips, gently mix until just combined — avoid overworking to keep patties tender. Divide the meat into 12 equal portions (about 2 oz or ~55 g each). Roll into loose balls, then flatten into patties about 2 to 2.5 inches in diameter and roughly 1/2 inch thick. Make a slight dimple in the center of each patty with your thumb to prevent doming during cooking.

Chill briefly (optional)
Place formed patties on a tray, cover, and chill in the refrigerator for 15–30 minutes if time allows; this helps them hold together when cooking.

Cook patties
Heat a large cast-iron skillet or griddle over medium-high heat until very hot (2–3 minutes). Add 1 tablespoon of butter and swirl to coat. Working in batches if necessary, arrange patties in the pan without crowding. Cook undisturbed for 2–3 minutes until a brown crust forms, then flip. Immediately place half-slices of cheese on 6 of the patties if making cheeseburger sliders, or on each patty if preferred. Cook another 1.5–2 minutes for medium doneness (internal temp ~145–155°F / 63–68°C). Transfer cooked patties to a plate and tent loosely with foil while you cook remaining patties.

Caramelize onions
In the same skillet or a separate pan, add remaining 2 tablespoons melted butter over medium heat. Add the thinly sliced onion and a pinch of salt. Cook, stirring occasionally, 10–12 minutes until soft and golden brown. If they begin to stick, lower heat and add a splash of water to deglaze. Remove from pan.

Assemble sliders
Spread about 1 teaspoon of sauce on the bottom half of each toasted bun. Place a lettuce leaf or a small piece of torn lettuce on the sauce to create a moisture barrier (optional). Top with a cooked patty, then a pickle slice, a piece of tomato (if using), and a spoonful of caramelized onions. Add a small smear of sauce to the inside of the top bun and close the slider. Repeat for all sliders.

Serve
Arrange sliders on a platter and serve immediately while warm. Provide extra sauce on the side for dipping. Leftover patties and buns can be stored separately in the refrigerator for up to 2 days.
