    Prep salmon

    Preheat the oven to 425°F (220°C). Pat the salmon fillet dry with paper towels. Place skin-side down on a rimmed baking sheet lined with foil or parchment. Lightly brush the flesh with 1 tablespoon olive oil, then evenly season with 1 teaspoon kosher salt and 1 teaspoon freshly ground black pepper.

    Initial roast

    Roast the salmon in the preheated oven on the middle rack for 8 minutes to cook most of the way through but keep the center moist. Timing assumes a 1 lb fillet about 1 inch thick; adjust by 2–3 minutes for thicker or thinner pieces.

Bourbon Glaze (Burnt-Ends Style)

    Make glaze

    While the salmon roasts, combine 2 tablespoons unsalted butter, 3 tablespoons packed brown sugar, 1 tablespoon soy sauce, 2 tablespoons bourbon, 1 teaspoon apple cider vinegar, 1 teaspoon Dijon mustard, 1 minced garlic clove, 1 teaspoon smoked paprika, 1/4 teaspoon cayenne (if using) and 1/2 teaspoon black pepper in a small saucepan. Warm over medium heat until the butter melts and the sugar dissolves, stirring frequently, and simmer gently for 3–4 minutes until slightly thickened. Taste and adjust seasoning; remove from heat.

    Flambé safety (optional)

    If you choose to flambé the bourbon for a more pronounced boozy flavor, remove the pan from the burner, add the bourbon, return to very low heat and ignite carefully with a long lighter. Let flames subside completely before returning glaze to the stove to finish thickening. This step is optional and requires caution.

    Glaze after initial roast

    After the initial 8-minute roast, remove the salmon from the oven. Using a spoon or pastry brush, liberally coat the top of the fillet with about half of the bourbon glaze, leaving the skin bare. Reserve the remaining glaze for later.

    Caramelize (burnt ends style)

    Increase oven temperature to 500°F (260°C) and switch to the broiler if preferred. Return the glazed salmon to the oven on the top rack and broil/roast for 3–6 minutes, watching closely, until the glaze is deeply caramelized at the edges and slightly 'burnt' or blistered in spots — this creates the burnt-ends character. Rotate the pan as needed for even caramelization. Total time will depend on oven intensity.

    Repeat glazing for deeper burn

    If you want intensified glaze layers similar to burnt ends, remove the salmon, brush on the remaining glaze, and broil for an additional 1–2 minutes until tacky and richly caramelized. Do not overcook the center — aim for moist, flakey salmon.

Finishing & Serving

    Rest the salmon for 2–3 minutes after removing from the oven to let juices settle. Using a spatula, transfer to a serving platter. Sprinkle 2 tablespoons chopped fresh parsley over the top and serve with lemon wedges. Squeeze lemon over portions just before eating to brighten flavors.

    Notes: If using a thicker fillet or multiple pieces, adjust roasting and broiling times. For a smokier profile, add a light dusting of extra smoked paprika before the final broil or finish with a few drops of liquid smoke in the glaze (use sparingly).
