Sweeten and flavor yogurt
In a medium bowl, whisk together the Greek yogurt, honey, vanilla extract, and lemon zest until smooth and homogenous. Taste and adjust sweetness (add up to 1 additional tablespoon honey if desired). Chill while preparing other components.
Fruit Mix

Prepare fruit
Wash all fruit. Hull and quarter the strawberries; leave blueberries whole; peel and dice the kiwi and mango; segment the orange or use canned mandarin segments (drain). Slice the banana and set aside to add just before serving to prevent browning. Combine strawberries, blueberries, kiwi, mango and orange segments in a bowl and gently toss to mix.

If you prefer a slightly macerated fruit layer, sprinkle 1 teaspoon of sugar or 1 tablespoon of orange juice over the mixed fruit, toss gently, and let sit 5–10 minutes.

Make quick compote
Place the mixed berries, sugar, lemon juice and water in a small saucepan over medium heat. Cook, stirring occasionally, until the berries release juices and slightly thicken, about 5–7 minutes. Remove from heat and let cool to room temperature. The compote should be spoonable but not watery; if it’s too thin, simmer 1–2 minutes longer.

Toast nuts if not pre-toasted: warm a small skillet over medium heat and toast chopped almonds or walnuts for 3–4 minutes, stirring, until fragrant and lightly browned. Cool before using.
Assembly

Layer parfaits
Choose 4 serving glasses or jars (about 8–10 oz each). Start with 2–3 tablespoons of yogurt in the bottom of each glass, then add a spoonful of fruit mix, followed by 1 tablespoon of compote (if using). Add another 2–3 tablespoons of yogurt, a layer of granola (about 2 tablespoons), then more fruit and a final dollop of yogurt. Top with sliced banana, remaining granola, toasted nuts, a sprinkle of shredded coconut (if using), and a mint leaf.

For make-ahead: reserve granola and banana slices separately. Cover assembled parfaits and refrigerate up to 6 hours (granola will soften). Add banana, granola and mint just before serving for best texture.

Serve immediately, with spoons. Each parfait yields a balanced mix of creamy yogurt, bright fruit, and crunchy topping.
