Prep tails
Pat the lobster tails dry with paper towels. Using kitchen shears, cut the top of the shell lengthwise and crack the shell slightly to expose the meat; leave shells attached at the base. Gently lift the lobster meat and rest it on top of the shell so it cooks evenly and fries quickly.

Season meat
Sprinkle the exposed lobster meat evenly with 1 tsp sea salt, 1/2 tsp black pepper, 1 tsp smoked paprika, 1/4 tsp cayenne pepper and 1/2 tsp garlic powder. Rub lightly so seasoning adheres.

Prepare dredge
In a shallow bowl whisk together 1/2 cup all-purpose flour and 2 tbs cornstarch. Lightly coat each lobster tail meat side in the flour mixture, shaking off excess.

Make tempura-style batter
In a medium bowl whisk together 1 large egg, 1/4 cup cold whole milk and 3 tbs cold sparkling water until just combined. Do not overmix — a few small lumps are fine. If batter is too thick, add 1 tsp more sparkling water.

Heat oil and butter
In a wide heavy skillet (or cast-iron pan) add 1 cup vegetable oil and heat over medium-high until it registers 350°F (175°C) or a small drop of batter sizzles immediately. Add 2 tbs unsalted butter to the oil and swirl until foaming subsides; this adds flavor and helps brown the crust.

Flash fry lobster
Working in a single layer (in two batches if needed), dip each pre-dredged lobster tail meat-side into the batter, letting excess drip off, then carefully place meat-side down into the hot oil. Fry 1 to 1.5 minutes meat-side, until the batter is golden and crisp. Flip and fry the shell-side very briefly (20–30 seconds) to warm through without overcooking. The lobster meat should be opaque and just cooked through—internal temp about 140–145°F (60–63°C). Remove to a paper towel-lined plate to drain.

Finish with butter
After each batch, spoon a little of the melted butter-oil mixture over the lobster meat to gloss and add flavor. Sprinkle smoked sea salt lightly over the hot tails if using.
Jalapeno–Horseradish–Honey Mustard Dip

While heating the oil, combine 1/2 cup mayonnaise, 2 tbs Dijon mustard, 1 tbs prepared yellow mustard, 2 tbs honey, 1 tsp prepared horseradish, 1 minced seeded jalapeno, 1 tbs fresh lime juice and 1 tsp apple cider vinegar in a small bowl.

Whisk until smooth and emulsified. Taste and season with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper. If you prefer more heat, add 1/2 tsp horseradish or some reserved jalapeno seeds. Chill in refrigerator for at least 10 minutes to let flavors meld; bring to room temperature before serving if chilled longer.
Assembly & Serve

Arrange 3 lobster tails per platter as an appetizer (serves 6 total portions). Place a small ramekin of jalapeno–horseradish–honey mustard dip alongside.

Garnish the lobster with a sprinkle of finely chopped chives and scattered microgreens or cilantro. Serve immediately with lime wedges on the side for squeezing over the tails.

Provide napkins and advise diners to squeeze lime and dip each bite into the mustard sauce. Leftover dip keeps refrigerated in an airtight container up to 3 days.
