Strawberry Shake

Select ripe Chardonnay and Pinot Noir grapes. Ensure they are free from any rot or damage.

Harvesting Grapes

Crush the harvested grapes to extract the juice. This can be done using a wine press or manually with clean hands.

In a sanitized fermentation vessel, combine the grape juice with water, sugar, and yeast.

Fermentation Preparation

Allow the mixture to ferment at a controlled temperature of around 15-20°C (59-68°F) for about 2-3 weeks, stirring occasionally.

Fermentation

After primary fermentation is complete, siphon the liquid into another vessel and add lemon and lime zest along with pineapple juice. Seal with an airlock and allow it to ferment for another 2 weeks.

Secondary Fermentation

After secondary fermentation, siphon the wine off the sediment into a clean vessel and let it rest for another week.

Racking

Once the wine is clear, bottle it in sanitized bottles, leaving a little space at the top. Seal the bottles with corks.

Bottling the Wine

Store the bottles in a cool, dark place to age for at least six months for optimal taste.
