Begin by hand-picking ripe Chenin Blanc grapes from the vineyard. Ensure to select only the healthiest and ripest grapes for optimal flavor.

Harvesting the Grapes

Once harvested, crush the grapes gently to release the juice. Remove any stems and leaves to keep the juice pure.

Crushing and Destemming

Add 50 grams of sulfur dioxide to the crushed grapes to prevent oxidation and spoilage. Mix thoroughly.

Adding Sulfur Dioxide

Add the yeast to the grape juice and mix well. Allow the mixture to ferment in a controlled environment at a temperature between 15-20°C for about 2-3 weeks.

Fermentation

Once fermentation is complete, press the mixture to separate the wine from the solids. Use a wine press for better efficiency.

Pressing

Dilute the wine with 1 liter of water and add 200 grams of sugar to enhance sweetness and balance acidity. Stir until fully dissolved.

Adding Water and Sugar

Transfer the clarified wine into a clean fermentation vessel, leaving sediment behind. This process is called racking and should be repeated a few times over the next couple of months.

Racking

Allow the wine to age for at least 4-6 months in a cool, dark place to develop its flavors. Taste periodically to determine when it reaches the desired profile.

Aging

Once aged, carefully bottle the wine, ensuring no oxygen enters the bottles. Seal and label them accordingly.
