Place the bottle of Prosecco in the refrigerator for at least 2 hours before serving to ensure it is well chilled.

Chill the Prosecco

In a small saucepan, combine equal parts water and sugar with a handful of honeysuckle flowers. Simmer on low heat until the sugar dissolves completely. Let cool, then strain to remove the flowers.

Prepare the Honeysuckle Syrup

If using fresh pears, wash and core them. Blend until smooth, then strain through a fine mesh sieve to extract the juice.

Juice the Pears

In a large mixing glass, combine 30 ml of honeysuckle syrup and 60 ml of pear juice. Stir gently to mix.

Combine Ingredients

Slowly pour in the chilled Prosecco (750 ml) over the mixture. Stir gently to combine without losing the fizz.

Add Prosecco

Pour the sparkling mixture into champagne flutes. Garnish each glass with a slice of fresh pear and a honeysuckle flower. Serve immediately and enjoy!
