Rinse and soak
Place the red lentils in a fine-mesh sieve and rinse under cold running water until the water runs clear. Drain well.

Simmer lentils
Combine the rinsed lentils and 6 cups water in a medium heavy-bottomed saucepan. Bring to a gentle boil over medium-high heat, then reduce heat to low to maintain a gentle simmer. Skim any foam from the surface with a spoon. Partially cover and simmer for 20–25 minutes, stirring occasionally, until lentils are very soft and beginning to break down.

Season base
When lentils are almost tender (about 15–18 minutes in), add 1 tsp salt and 1/4 tsp black pepper to the pot. Continue cooking until fully soft. If the mixture becomes too thick before the lentils are tender, add up to 1/2 cup additional hot water to reach a thick stew consistency.

Prepare aromatics
While lentils simmer, heat a small skillet or heavy sauté pan over medium-low heat. Add the niter kibbeh (or butter). Once it melts and is fragrant (about 30–45 seconds), add the chopped onion. Sauté gently, stirring frequently, for 8–10 minutes until the onion is very soft and translucent but not browned. Reduce heat if onions begin to color too quickly.

Bloom the spices
Stir in the berbere spice blend and mitmita. Cook the mixture for 1–2 minutes, stirring constantly so the spices bloom in the fat and release their flavors. If using tomato paste and diced tomato, add the paste now and cook for another 1 minute, then add the diced tomato and cook until the tomato softens, 2–3 minutes.

Slow finish
Reduce heat to the lowest setting and simmer the combined mixture, uncovered, for an additional 8–12 minutes to let flavors meld and the stew thicken to a slightly creamy consistency. Stir occasionally to prevent sticking. Adjust consistency with a splash of water if too thick.
Finishing & Garnish

Finish with acidity: Remove the pot from heat and stir in 1 tablespoon lemon juice to brighten flavors.

Taste and adjust salt, pepper, or berbere level to your preference.

Transfer Ye Messer Wot to a serving bowl. Drizzle with 1 tsp olive oil if using and sprinkle chopped cilantro or parsley on top.

Serve hot with injera, rice, or flatbread. Keeps refrigerated in an airtight container for up to 4 days; reheat gently on the stove with a splash of water.
