Rinse the chicken pieces under cold water. Pat dry with paper towels. Rub chicken with lemon juice and a pinch of salt; let rest 10 minutes, then pat dry again.

Make the Doro Wot Sauce

Sweat and caramelize onions
In a heavy-bottomed pot or Dutch oven over medium-low heat, add the niter kibbeh (or butter) and neutral oil. Add the finely chopped onions and a pinch of salt. Cook slowly, stirring frequently, until the onions are deeply softened and beginning to caramelize and turn a deep golden-brown — about 30 to 40 minutes. Lowering the heat prevents burning and develops the classic rich flavor.

Add aromatics and spices
Raise heat to medium. Add minced garlic and ginger; cook 1–2 minutes until fragrant. Stir in tomato paste and cook 2–3 minutes to reduce raw flavor. Add berbere and paprika, stirring constantly for 1–2 minutes to bloom the spices in the fat; the mixture will become fragrant and red.

Deglaze and simmer
Pour in 1 cup of the chicken stock (reserve the rest) and scrape up any browned bits from the pot. Reduce heat to low and simmer the sauce gently for 8–10 minutes so flavors meld. If sauce becomes too thick and sticks, add up to the remaining 1 cup of stock to reach a thick, stew-like consistency.

Taste and season with salt and black pepper. Remember the sauce should be boldly flavored; adjust berbere or salt as needed.
Cook Chicken and Eggs in Sauce

Simmer until cooked
Reduce heat to low so the sauce is at a steady simmer. Cover the pot partially and cook for 30–40 minutes, turning the chicken once or twice, until the chicken is cooked through and tender (internal temperature 165°F/74°C at the bone). Add small amounts of stock or water if sauce reduces too much during cooking.

If you want a richer finish, stir in 1 tablespoon additional niter kibbeh or butter right before serving.
Finish & Serve

Transfer chicken and eggs to a serving platter and spoon plenty of sauce over them. Garnish with chopped cilantro or parsley if using and serve with lemon wedges on the side.

Traditional serving suggestions: serve with injera (Ethiopian flatbread) or steamed rice. To eat with injera, tear pieces and use them to scoop up chicken, egg, and sauce.

Leftovers keep refrigerated for up to 3 days. Reheat gently on the stovetop with a splash of water or stock to loosen the sauce.
