Prep Vegetables

    Wash and dry

    Wash the tomatoes, cucumber, basil, and salad greens thoroughly. Dry tomatoes and greens in a salad spinner or by patting with clean kitchen towels.

    Slice tomatoes

    Cut large tomatoes into 1/2-inch thick wedges or slices. Halve or quarter cherry tomatoes depending on size so pieces are bite-sized. Place all tomato pieces in a large serving bowl.

    Prepare cucumber

    Peel the cucumber if desired. Slice lengthwise and remove seeds (optional) then cut into 1/4-inch half-moons or bite-sized chunks. Add to the bowl with tomatoes.

    Thinly slice onion

    Peel and thinly slice the red onion. If you prefer milder onion flavor, soak the slices in cold water for 5 minutes, then drain and pat dry. Add onions to the tomato-cucumber mixture.

    Add greens and basil

    Tear basil leaves roughly and add to the bowl. Add the mixed salad greens if using. Gently toss to distribute ingredients evenly.

Make Dressing

    In a medium bowl or jar combine 6 tbs extra-virgin olive oil, 3 tbs red wine vinegar, 1 tsp Dijon mustard, 1 tsp honey (or maple syrup), minced garlic, 1 tsp salt, and 1/2 tsp freshly ground black pepper.

    Whisk vigorously for 20–30 seconds (or shake in a jar with tight lid) until the dressing emulsifies and becomes slightly thickened. Taste and adjust seasoning: add a little more vinegar if you want brighter acidity, more oil to mellow, or extra salt/pepper to taste.

Assemble & Finish

    Pour about two-thirds of the dressing over the tomato-cucumber mixture and gently toss with salad tongs or two large spoons to coat without crushing the tomatoes. Let sit at room temperature for 5–10 minutes so the tomatoes absorb some dressing.

    Taste and add the remaining dressing as needed. Adjust salt and pepper to taste.

    If using, crumble feta over the salad or break burrata into pieces and nestle on top. Sprinkle toasted pine nuts or walnuts for texture.
