    Wash and trim greens

    Rinse the mixed greens thoroughly in cold water to remove grit. For thicker greens (collards, kale, chard), stack leaves, roll tightly and slice crosswise into 1/2-inch ribbons. Roughly chop tender spinach leaves. Remove and discard large tough stems.

    Mince aromatics

    Peel and finely chop the onion. Peel and smash then mince the garlic cloves so they release more flavor when steamed.

    Sauté aromatics (optional step for deeper flavor)

    Place a large heavy-bottomed pot or Dutch oven over medium heat and add 1 tablespoon of olive oil. Add the chopped onion and a pinch of salt. Cook, stirring, until the onion is softened and translucent, about 4–5 minutes. Add the minced garlic and red pepper flakes and cook 30–45 seconds until fragrant, taking care not to brown the garlic.

    Add liquids and seasonings

    Pour in 2 cups of vegetable or chicken stock, add the bay leaves, 1 teaspoon kosher salt (reserve the rest for later), and freshly ground black pepper. Increase heat to medium-high and bring the liquid to a gentle simmer.

    Add greens and steam

    Add the prepared greens in batches, pressing them down to fit as they wilt. Once all greens are in the pot and submerged in the simmering liquid, cover with a tight-fitting lid. Reduce heat to medium-low and steam the greens until tender: 12–18 minutes for a mix of sturdier and tender greens. Stir once midway to ensure even cooking. Taste for seasoning after about 12 minutes.

    Adjust seasoning

    Remove the lid, stir in the apple cider vinegar and remaining 1 teaspoon kosher salt if needed. Cook uncovered for another 1–2 minutes to allow excess liquid to reduce slightly. Discard bay leaves.

Finish & Serve

    Transfer the steamed greens to a serving bowl or dish. Drizzle with the remaining 1 tablespoon of olive oil and toss gently to coat. Taste and adjust salt and pepper as needed. Serve hot with lemon wedges on the side for brightening. Optional: for richer flavor, finish with an extra drizzle of olive oil or a splash of extra vinegar.
