Method
Bone-In Chicken (Roast)

Marinate
Pat chicken pieces dry. In a bowl combine olive oil, minced garlic, smoked paprika, dried oregano, lemon juice, salt and pepper. Rub marinade evenly over chicken and let rest at room temperature for 15 minutes (or refrigerate up to 2 hours).

Roast
Preheat oven to 200°C (400°F). Place chicken on a rimmed baking sheet or in a shallow roasting pan skin-side up. Roast for 25–30 minutes or until internal temperature reaches 75°C (165°F) and skin is golden and crisp. Let rest 5 minutes before serving.
Lamb Stew (Small Batch)

Brown the lamb
Heat vegetable oil in a medium saucepan or small Dutch oven over medium-high heat. Season lamb cubes lightly with half the salt and pepper. Add lamb in a single layer and brown on all sides, about 4–5 minutes. Remove and set aside.

Simmer
Return lamb to the pot, add stock, dried thyme and bay leaf. Bring to a gentle simmer, cover, and reduce heat to low. Cook for 45–55 minutes until lamb is tender and sauce has reduced slightly. Adjust seasoning with remaining salt and pepper. If sauce is too thin, simmer uncovered for 5–10 minutes to thicken.
Beef Curry (Small Pot)

Sear beef
Heat oil in a small saucepan over medium-high heat. Season beef with half the salt and pepper. Sear beef cubes in batches until browned on all sides, 3–4 minutes per batch. Remove and set aside.

Build curry base
Lower heat to medium and add sliced onion to the pan; cook until translucent, 4–5 minutes. Add minced garlic and grated ginger; cook 30 seconds. Stir in curry powder and ground cumin and cook 1 minute to bloom the spices.

Simmer curry
Add crushed tomatoes and browned beef back to the pan. Stir to combine, then pour in coconut milk. Bring to a low simmer, cover partially, and cook gently for 35–45 minutes until beef is tender and sauce is well flavored. Taste and season with remaining salt and pepper.
Sautéed Fish (Quick)

Prep fish
Pat fillets dry and season with salt and pepper. Lightly dust both sides with the measured flour to promote browning.

Finish
Squeeze lemon juice and sprinkle lemon zest and chopped parsley over the fish. Keep warm until serving.
