Kitfo (seasoned raw beef)

    Prep and chill

    Partially freeze the beef for about 20–30 minutes until very firm but not rock solid; this makes mincing easier and safer. Keep all tools and bowl chilled if possible.

    Trim and mince

    Trim any excess fat or sinew from the beef, then use a sharp chef's knife to finely mince the meat. For a silkier texture, chop repeatedly until almost paste-like but still with small discernible pieces. Alternatively, pulse briefly in a chilled food processor (no more than 6–8 short pulses) and finish by hand.

    Season

    Transfer the minced beef to a chilled bowl. Add the grated garlic, kosher salt, freshly ground black pepper, finely minced red onion (if using), mitmita (or cayenne), and minced herb. Mix gently but thoroughly with a wooden spoon or spatula so the spices and melted niter kibbeh coat the meat evenly. Taste a very small pinch (optional and only if you are comfortable) to adjust seasoning.

    Warm with fat

    Warm the 3 tbsp of melted niter kibbeh briefly in a small pan until just warm (do not boil). Pour it over the seasoned minced beef and stir to combine. The goal is 'warm' kitfo — the meat should be cool-to-warm but not cooked through. Keep chilled briefly if it becomes too warm.

Injera wraps

    Warm a nonstick skillet over low heat. Brush each injera lightly with melted butter or niter kibbeh on one side and warm 20–30 seconds per side until pliable and fragrant. Stack and keep covered with a clean towel to retain moisture.

    If using store-bought crepes or pita, warm them gently the same way so they are soft and easy to roll.

Assembling the rolls & garnish

    Lay one warmed injera flat, buttered side up. Place about 3–4 tablespoons (approx. 1.5–2 oz) of the seasoned kitfo in a narrow line along one edge of the injera, leaving 1/2 inch border.

    Top the kitfo with a small pinch of crumbled ayib or feta, a few slices of tomato, and a small handful (≈2 tbsp) of shredded lettuce or greens.

    Fold the edge over the filling and roll tightly to form the roll. Repeat with remaining injera and filling. Keep rolls seam-side down while resting for 1–2 minutes so they hold shape.

    Cut each roll in half on the diagonal if desired. Arrange on a platter, sprinkle a light dusting of berbere or extra mitmita to taste, and serve immediately with lemon wedges on the side.
