    Prep chicken

    Pat the 4 lb of bone-in chicken pieces dry with paper towels. Season generously with 2 tps black pepper and 2 tbs of the kosher salt, rubbing into the skin and under any loose skin.

    Hard-boil eggs

    Place 20 eggs in a single layer in a large stockpot and cover with cold water by 1 inch. Bring to a boil over high heat, then cover, remove from heat, and let sit 10 minutes. Immediately transfer eggs to an ice bath for 10 minutes. Once cool, peel and set aside.

    Reserve the hard-boiled eggs whole. If you prefer, you may make small slits in eggs so they absorb sauce; keep them whole for serving as a side.

Berbere Sauce & Base

    Caramelize onions

    In a very large heavy-bottomed pot or Dutch oven over medium-low heat, melt 1 cup niter kibbeh (or butter). Add 8 cups finely chopped onions and a pinch (about 1 tsp) of the salt. Cook gently, stirring often, until deeply golden and caramelized, about 45–60 minutes. Reduce heat if onions start to brown too quickly; patience is key to authentic flavor.

    Add aromatics

    When onions are richly browned, add 12 minced garlic cloves and 1 cup grated fresh ginger. Cook 4–6 minutes, stirring, until fragrant and the raw smell is gone.

    Toast spices & build sauce

    Stir in 1 cup berbere spice mix, 2 tbs paprika, and 2 tsp ground fenugreek. Cook the spice-onion mixture 3–4 minutes, stirring constantly so spices bloom but do not burn. Add 6 tbs tomato paste and cook 4 minutes, stirring until tomato paste darkens slightly.

    Deglaze & simmer

    Pour in 1 cup white wine (if using) to deglaze the pot, scraping any browned bits from the bottom. Add 4 cups chicken stock and 2 tbs lemon juice, stir to combine, and bring to a gentle simmer. Taste and adjust salt: add the remaining 1 tbs kosher salt now if needed.

    Cook chicken in sauce

    Nestle the seasoned chicken pieces into the simmering berbere sauce, skin side up as possible, in a single layer or slightly overlapping. Spoon sauce over the pieces so they are partially submerged. Cover and simmer gently (maintain a low simmer) for 35–45 minutes, turning once halfway, until the chicken is cooked through (internal temperature 165°F/74°C) and the sauce has thickened. If sauce becomes too thick, add up to 1/2 cup more stock or water.

    Add eggs

    In the last 10 minutes of cooking, tuck the peeled hard-boiled eggs into the sauce so they heat through and absorb some flavor. Spoon sauce over eggs occasionally. Simmer uncovered for the final 5–10 minutes to let the sauce cling to the eggs and chicken.

Finishing & Serving

    Adjust seasoning: taste sauce and add up to 1 tsp extra salt and 2 tbs berbere for extra heat/color if needed. Stir gently to coat.

    Garnish with 1 cup chopped fresh cilantro or parsley just before serving. Serve hot as a side: this 4 lb portion with 20 eggs is intended to serve 20 people as a side—present on a large platter with sauce spooned over chicken and eggs.

    Make-ahead/reheat: the flavors deepen if made a day ahead. Cool, refrigerate, then gently rewarm over low heat adding a splash of stock to loosen sauce; reheat until chicken is warmed through and eggs are hot.
