Berbere Spice Syrup

Combine water and granulated sugar in a small saucepan over medium heat. Stir until the sugar dissolves and the mixture comes to a gentle simmer.

Add 1.5 tablespoons berbere spice blend, black peppercorns (if using), and bay leaf. Reduce heat to low and simmer gently for 4–6 minutes to infuse the spices—do not boil vigorously.

Remove from heat and let the syrup steep for 15–20 minutes to deepen the flavor. Taste and adjust: if it's too fiery, strain and add a touch more water; if too mild, you can add a pinch more berbere and warm briefly (then re-steep).

Strain the syrup through a fine-mesh sieve or cheesecloth into a clean jar, pressing on solids to extract flavor. Discard solids. Cool to room temperature, then refrigerate. Syrup will keep up to 2 weeks refrigerated.
Rim & Glass Prep

On a small plate, mix ½ teaspoon flaky sea salt with ½ teaspoon ground berbere (or a pinch smoked paprika if you want smoky warmth). Spread into an even layer.

Rub a lime wedge around the rim of a rocks or coupe glass. Dip the rim into the salt–berbere mix to coat. Set the glass aside and chill if desired.
Cocktail Build & Serve

Fill a cocktail shaker with 6 ice cubes.

Add 2 oz reposado tequila, 1 oz fresh lime juice, 0.75 oz orange liqueur, 0.5 oz berbere spice syrup, and 0.25 oz agave syrup (if using) to the shaker.

Dry shake (no ice) for 5–7 seconds only if you want a slightly silky texture, then add ice and shake vigorously for 10–15 seconds until the shaker is well chilled and slightly frosted.

Double-strain the cocktail into the prepared rimmed glass over fresh ice (for a rocks presentation) or without ice (for coupe). Use a fine mesh strainer to catch any spice sediment.

Garnish with a thin lime wheel or twist laid on the rim or floated on the drink. Optionally sprinkle a tiny pinch of berbere on top for aroma.
