Fit Turkey Wrap

In a large mash tun, heat the filtered water to approximately 165°F (74°C). Add the pale malt, caramel malt, and wheat malt, stirring well to ensure all grains are saturated. Maintain the mash at a temperature of 152°F (67°C) for 60 minutes.

Mashing the Grains

After the mash is complete, sparge the grains with hot water (around 170°F or 77°C) to collect the wort. Aim to collect about 6 gallons of wort for boiling.

Sparging

Bring the collected wort to a boil. Once boiling, add the Citra hops and boil for 60 minutes. Add the Mosaic hops during the last 15 minutes of the boil and the Amarillo hops in the last 5 minutes to preserve their aroma.

Boiling the Wort

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches approximately 70°F (21°C). Transfer the cooled wort to a sanitized fermentation vessel.

Cooling the Wort

Sprinkle the New England Ale yeast on top of the cooled wort. Seal the fermentation vessel with an airlock and let it ferment at room temperature for about 1-2 weeks.

Adding Yeast

Once fermentation is complete, dissolve the corn sugar in a small amount of boiling water to create priming sugar. Add this to the bottling bucket, then siphon the beer into the bottling bucket, mixing gently. Bottle the beer into sanitized bottles and cap them.

Bottling the Beer

Allow the bottles to condition at room temperature for another 1-2 weeks before chilling and enjoying your Cloudlast Hazy IPA.
