Method

Prepare Muffin Batter

1

Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and chai spice mix until well combined.

2

Combine Wet Ingredients

In another bowl, mix the milk, old faithful bourbon, and blueberry simple syrup until blended.

3

Whip Egg Whites

In a separate bowl, use an electric mixer to beat the egg whites until soft peaks form.

4

Combine Mixtures

Fold the wet ingredients into the dry ingredients until just combined. Gently fold in the whipped egg whites and fresh blueberries until evenly distributed.

Bake Muffins

5

Preheat Oven

Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.

6

Fill Muffin Tin

Spoon the muffin batter into each muffin cup, filling them about 3/4 full.

7

Bake

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean.

8

Cool

Remove the muffins from the oven and allow them to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Prepare Topping

9

Prepare Cream

In a small bowl, lightly whip the cream until it starts to thicken but is not fully whipped.

10

Garnish Muffins

Once the muffins are cooled, top each muffin with a dollop of whipped cream and sprinkle with toasted almond slivers.
