Soju Bloody Mary

OLD FASHIONED

In a large mash tun, combine the Pilsner malt, wheat malt, and flaked oats. Heat 4 gallons of filtered water to 165°F (74°C) and add to the grains. Stir well to ensure all grains are saturated.

Prepare the Mash

Allow the mash to rest at 150°F (65°C) for 60 minutes. This helps convert the starches in the grains to sugars.

After the mash rest, sparge the grains with an additional 2 gallons of hot water at 170°F (77°C) to collect the wort.

Sparging

Bring the collected wort to a boil in a large kettle.

Begin Boil

Once boiling, add the Hallertau hops. Boil for 30 minutes.

Add Hops

After 30 minutes, add the coriander and orange peel. Continue boiling for an additional 15 minutes.

Add Adjuncts

After 15 minutes, add the Saaz hops and boil for another 5 minutes.

Finish Boil

After the boil, cool the wort quickly to about 70°F (21°C) using a wort chiller or an ice bath.

Cool the Wort

Transfer the cooled wort to a sanitized fermenter and pitch the Belgian ale yeast. Seal the fermenter with an airlock.

Allow the beer to ferment at around 68°F (20°C) for 1-2 weeks, until fermentation is complete.

Fermentation

Sanitize your bottles and caps, and prepare for bottling.

Prepare Bottles

Dissolve priming sugar in a small amount of water and add it to the beer before bottling to carbonate.

Add Priming Sugar

Fill the bottles with the beer, leaving about an inch of headspace, and cap them.

Bottle the Beer

Store the bottles at room temperature for about 1-2 weeks to carbonate.
